Grilled Squid with Wine Vinaigrette
Grilled Squid with Wine Vinaigrette is refreshing with a tang of lemon. This is a simple and straight forward recipe to serve as an appetizer. To make it a meal, increase the amounts of the ingredients . Serve over rice or with polenta.
If you don’t want to grill, you can broil the squid in your kitchen oven. You can even sauté the squid in a small amount of butter and olive oil, about a tablespoon of each. This is a perfect appetizer for squid lovers. I have taken it a step further and served it as an entrée over rice.
Serves 2 as an appetizer
2-3 large fresh squid bodies, cleaned, inner bone removed or thawed frozen
1. Grill over medium coals for 2 1/2 minutes on each side. Set aside to keep warm.
Make the dressing:
3 tablespoons olive oil
2 garlic cloves, finely chopped
1 tablespoon each of lemon juice, white wine, finely chopped parsley and melted butter
2. In a small bowl, combine the ingredients. Drizzle over the squid. and serve the grilled squid with wine vinaigrette warm or at room temperature.
