Tailgate Suggestions

Looking for tailgate suggestions for the Super Bowl game?  Looking for some delicious things to cook up? Well, look no further!  Try the Portuguese Bean Stew in my first book, Portuguese Home Cooking! Lots of potatoes, sausage and kidney beans is like chili but with different flavors..   Look for more of my other tailgate suggestions that are popular. One favorite is the Chili Chicken Wings (Asas de Frango Piri piri) from my book, Authentic Portuguese Cooking.

Simple and so yummy!  Flavorful blend of spices and herbs keep you coming back for more.  Feel free to substitute a whole chicken, roast or grill it and serve with a salad. The seasoning paste can also be used on pork cutlets. Serve hot, room temperature or cold. Make a paste (if you have one)  using a mortar and pestle or a food processor.   Great tool, the mortar and pestle really blends the flavors together !

  • 8  cloves of garlic
  • 1  tablespoon paprika
  • kosher salt to taste
  • 1 bay leaf, crumbled
  • 2 tb finely chopped cilantro or parsley
  • 1 tsp turmeric
  • 1/2 tsp black pepper
  • 1/4 tsp cumin
  • 1/2 cup olive oil or melted butter
  • Hot sauce to taste
  • 1/2 cup apple cider vinegar
  • 1/4 cup brandy
  • 2 pounds chicken wings
  1. Use a mortar and pestle to make a paste with garlic, salt, paprika bay leaf, cilantro, turmeric, back pepper  and cumin.
  2. In a cup, combine olive oil, hot sauce, vinegar, and brandy. Blend into spice paste.
  3. Coat wings with mixture and place wings in a single layer in a non-reactive dish. Cover and chill several hours or overnight.
  4. About 1/2 hour before cooking, reserving any marinade, transfer wings to another dish and let stand about 1/2 hour. Grill or broil, basting  periodically with the reserved marinade.  Cook until juices run clear, the skin is crispy and richly bronze.  Bet you can’t stop at one!
