Oven Baked Fish with Vegetables

Oven Baked Fish with Vegetables is easy enough to do when you have time constraints. It makes a perfect dish for guests, as well. Serve the Oven Baked Fish with Vegetables with some nice white wine like vinho verde (Portuguese Green Wine) and artisan bread on the side. You can also parboil the vegetables if you like.

Serves 4 to 6

  • 2 pounds fish steaks or whole dressed ( like halibut, salmon, haddock )-whatever you like
  • 1/2  cup olive oil
  • 2 large onions,  thinly sliced, divided
  • 2 large tomatoes, thinly sliced or chopped in medium cubes, divided
  • 4 russet potatoes, peeled, thinly sliced, divided
  • 2 garlic cloves, finely chopped, divided
  • 1/2 cup white wine
  • 1 tablespoon paprika
  • 1/4 cup finely chopped fresh cilantro or parsley

Preheat the oven to 350 °F.

  1. Coat a 9 x 13 baking dish with a tablespoon or two of olive oil.  Arrange one half of the onions, tomatoes, potato slices and garlic over the bottom of the dish.  Make sure the vegetables are cut small and the potatoes thinly or they will not be fully cooked when the fish is done. Place the fish on top of the vegetables.  Top the fish with the remaining onions and  tomatoes followed by the potatoes and garlic.
  2. Combine the remaining olive oil, wine, paprika, and cilantro or parsley in a measuring cup. It should be fairly thin like oatmeal. Add a bit more olive oil as needed to thin, but not too much.
  3. Mix well then pour over the vegetables and fish, spreading to coat, then cover with foil.  Transfer the dish to the preheated oven for 35-40 minutes, basting with the broth.  The Oven Baked Fish with Vegetables is done when the fish is just opaque and just starting to flake. Be careful to not overcook your fish.
