Pasta with Linguiça Sausage and Onions

This is a fusion of Pasta with Linguiça Sausage and Onions.  Believe it or not, there are Italian restaurants in Lisbon and not bad I have to admit. So I thought I would create a little fusion of the two cuisines in homage to the history of Italy and Portugal.  Treat your sweetie to a quick and easy fusion dish of  Italian Pasta with Portuguese Linguica Sausage and Onions.  A little Portuguese music in the playing background, candlelight, wine and your personal creative touch completes the atmosphere.

Serves 2 with seconds

 

3             tablespoons olive oil

1/2            pound linguiça sausage, cut crosswise into 1/4-inch slices

1/2             cup medium chopped onions

14           ounce can peeled, seeded and diced tomatoes, juices reserved

½            cup fresh parsley

1             garlic cloves, finely chopped

1             roasted green or red sweet pepper, seeded, stemmed, peeled cut in large pieces

Hot sauce to taste

Fresh ground black pepper to taste

Coarse sea salt to taste

Black olives

1/2             pound spaghetti, angel hair pasta or  of choice

 

1. Heat the olive oil in a large skillet. Add the linguiça and onions and sauté until onions are lightly golden and sausage has taken on some color, about 3 to 4 minutes.

2. Toss in the tomatoes and juice. Bring to a boil over medium heat then reduce the heat to medium-low and simmer for 10 minutes. Mix in the parsley and garlic. Continue to simmer until the sauce is reduced and is somewhat thickened. Season with the hot sauce, black ground pepper and salt to taste. Stir in the peppers.

3.Cook the pasta according to the package directions until nearly done, drain and add to the sauce. Stir and simmer about 5 minutes longer until the pasta is done to your liking. Serve garnish with olives and grated cheese.
