Beer Cake (Bolo de Cereveja)
Desserts

Beer Cake (Bolo de Cereveja)

Beer Cake (Bolo de Cereveja) is a favorite with those who like beer.  Make sure you use your favorite beer for this cake.

 Serves 10 to 12

2 cups sugar

1 cup butter, softened

4 eggs, separated

1 cup beer (8 ounces

3 cups all-purpose flour

1 teaspoon baking powder

Preheat the oven to 350ºF.

1. In a large bowl, using the high speed of an electric mixer or mixing by hand, beat the sugar with the butter, until smooth, about 1 minute. Beat in the egg yolks,, at medium speed, until the ingredients are fluffy and pale yellow, about 2 to 3 minutes.

2. Stream in the beer, mixing to blend. Add the flour and the baking powder and mix thoroughly, about 1 minute.

3. In a separate bowl, use clean beaters to beat the egg whites until soft peaks. Gently fold the beaten whites into the batter. Pour into a lightly greased and floured 10-inch tube pan.

4. Bake the cake in the preheated oven until a wooden skewer comes out clean, about 45 to 50 minutes.  The cake should spring back when lightly pressed with your finger. Cool the Beer Cake (Bolo de Cereveja) for about 5 minutes before removing from the pan.

Light or regular beer works equally well.
