Oven Baked Fish with Vegetables

Peixe Assado no Forno

Serves 4 to 6

  • 2 pounds fish steaks or whole dressed ( like halibut, salmon, haddock )-whatever you like
  • 1/2  cup olive oil
  • 2 large onions,  thinly sliced, divided
  • 2 large tomatoes, sliced, divided
  • 4 russet potatoes, peeled, thinly sliced, divided
  • 2 garlic cloves, finely chopped, divided
  • 1/2 cup white wine
  • 1 tablespoon paprika
  • 1/4 cup finely chopped fresh cilantro or parsley

 

Preheat the oven to 350 °F.

  1. Coat a 9 x 13 baking dish with a tablespoon or two of olive oil.  Arrange one half of the onions, tomatoes, potato slices and garlic over the bottom of the dish.  Place the fish on top of the vegetables.  Top the fish with the remaining onions and  tomatoes followed by the potatoes and garlic.
  2. Combine the remaining olive oil, wine, paprika, and cilantro or parsley in a measuring cup.
  3. Mix well then pour over the vegetables and fish.  Bake in the preheated oven for 35-40 minutes, basting with the broth.  Fish is done when it is opaque and just starting to flake.
