Grilled Squid with Lemon Wine Vinaigrette (Lulas Grelhada com Vinho )

Serves 2 as an appetizer

This is a perfect appetizer for squid lovers.  I have taken it a step further and served it as an entrée over rice.

  • 2-3  large squid, cleaned, inner bone removed
  1. Grill over medium coals for 2 1/2 minutes on each side.  Set aside to keep warm.

Make the dressing:

  • 3 tablespoons olive oil
  • 2 garlic cloves, finely chopped
  • 1 tablespoon lemon juice
  • 1 tablespoon white wine
  • 1 tablespoon finely chopped parsley
  • 1 tablespoon butter, melted
  1. In a small bowl, combine the ingredients.  Drizzle over the squid. and serve
